做(zuò )法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把陈皮泡软,拍(pāi )裂一小块姜,热(rè )锅(guō ),用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲(bāo )里(lǐ )的清水(shuǐ ),放入煎煮(zhǔ )好(hǎo )的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中小火煲(bāo )一个半(bàn )小时,下盐调味即可(kě )品尝。
