做法:春(chūn )笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段(duàn )翻炒(chǎo )1分钟左(zuǒ )右(yòu )。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水快熬干(gàn )的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
