做法:春笋切成片后(hòu )加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右(yòu )。再(zài )加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量(liàng )清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到水快熬干的(de )时候加(jiā )入(rù )盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
