做法:洗净宰好鲫鱼(yú ),洗净淮山和薏米。用清水(shuǐ )把陈(chén )皮泡软,拍裂一小块姜,热(rè )锅,用姜块在锅(guō )上(shàng )擦一遍,放两勺(sháo )油(yóu ),待油六成(chéng )热(rè )下鱼(yú ),煎(jiān )至微黄。煮沸瓦煲里(lǐ )的清水,放入(rù )煎(jiān )煮好的鲫鱼和其他材料,武火(huǒ )煮沸,转中小火煲一(yī )个半小时,下(xià )盐调味即可品尝。
