做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米(mǐ )。用清水把陈皮泡(pào )软,拍裂一小块姜,热锅,用姜(jiāng )块(kuài )在锅上擦一遍(biàn ),放两勺油(yóu ),待油六成热下(xià )鱼,煎至(zhì )微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其(qí )他材料,武火煮沸,转中(zhōng )小火煲(bāo )一个半小时,下盐调味即可品尝(cháng )。
