做法:春(chūn )笋切(qiē )成片后加少(shǎo )许盐(yán )捞出后用清水(shuǐ )浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入(rù )生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火(huǒ )。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
