做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻(fān )炒(chǎo )均匀稍收汁时盖上(shàng )锅盖(gài )焖。
