做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把(bǎ )陈皮(pí )泡软,拍裂一小块姜,热锅,用姜块在锅上(shàng )擦一(yī )遍(biàn ),放两勺油,待油(yóu )六成热下(xià )鱼,煎至(zhì )微黄。煮(zhǔ )沸瓦煲里的清水,放(fàng )入煎煮好(hǎo )的鲫鱼和(hé )其他材料,武火煮沸,转中小火煲(bāo )一(yī )个(gè )半小时,下盐调味(wèi )即可品尝。
