做法:洗(xǐ )净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍(pāi )裂一小(xiǎo )块姜,热锅,用姜块在锅上擦(cā )一遍,放(fàng )两勺油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清(qīng )水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他材料,武(wǔ )火煮沸,转(zhuǎn )中小(xiǎo )火煲一个半(bàn )小时,下盐(yán )调味即可(kě )品尝。
