做(zuò )法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和(hé )薏米。用清(qīng )水把陈皮泡软(ruǎn ),拍裂(liè )一小块(kuài )姜,热锅,用姜块在(zài )锅上擦一遍,放两勺油,待油六成热(rè )下鱼,煎至微(wēi )黄。煮沸瓦煲里的清(qīng )水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小火煲一个(gè )半小(xiǎo )时,下盐(yán )调味(wèi )即可品尝。
