做(zuò )法(fǎ ):春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入(rù )盐(yán ),翻炒均(jun1 )匀稍收汁时(shí )盖上锅盖(gài )焖。
