做(zuò )法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放(fàng )入生(shēng )姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半(bàn )掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快(kuài )熬(áo )干的时(shí )候加入(rù )盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
