做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切(qiē )成段。锅(guō )烧热,倒入(rù )2勺油,放(fàng )入(rù )生姜(jiāng )、春(chūn )笋(sǔn )、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖(mèn )。
