做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一(yī )遍,放两勺油,待油(yóu )六成热(rè )下(xià )鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入(rù )煎煮好(hǎo )的鲫(jì )鱼和(hé )其他材(cái )料,武火煮沸(fèi ),转中小(xiǎo )火(huǒ )煲一个半小时(shí ),下盐调味即可品尝。
