做法:春(chūn )笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住(zhù )春笋,盖上锅盖大火(huǒ )煮开(kāi )后转中(zhōng )火。煮到(dào )水快熬干的时候加入(rù )盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
