做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火(huǒ )煮(zhǔ )开后转中火。煮到水快熬(áo )干的时候加入盐(yán ),翻炒均匀稍(shāo )收(shōu )汁时盖(gài )上(shàng )锅(guō )盖(gài )焖。
