做法:春(chūn )笋切成(chéng )片(piàn )后加少许盐捞出后用清水(shuǐ )浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖上锅(guō )盖(gài )大火(huǒ )煮开后(hòu )转(zhuǎn )中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖(mèn )。
