做法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮到(dào )水快熬干(gàn )的(de )时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖(gài )上锅盖焖。
