做法:春笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入(rù )生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬(áo )干(gàn )的时候(hòu )加入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅盖焖。
