做法:洗(xǐ )净宰好鲫鱼,洗净(jìng )淮(huái )山和(hé )薏米。用清水把陈皮泡软,拍(pāi )裂一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅上擦一(yī )遍(biàn ),放两勺油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦(wǎ )煲里(lǐ )的清(qīng )水,放入(rù )煎煮(zhǔ )好的鲫鱼和其他材料,武(wǔ )火煮沸,转中(zhōng )小火煲一个半小时,下盐调味即可品尝(cháng )。
