做(zuò )法(fǎ ):春笋切(qiē )成(chéng )片后加少许盐捞出(chū )后用清(qīng )水浸(jìn )泡,生姜切片,葱(cōng )切(qiē )成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收(shōu )汁(zhī )时盖上锅盖焖。
