做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米(mǐ )。用(yòng )清水把(bǎ )陈皮泡软,拍裂一小(xiǎo )块姜,热(rè )锅,用姜块在锅上擦一遍,放两勺(sháo )油,待油六成热(rè )下(xià )鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入(rù )煎煮好(hǎo )的鲫(jì )鱼和(hé )其他(tā )材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐调味即可品尝。
