做法:春笋切成片(piàn )后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切(qiē )片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖(gài )上锅盖(gài )大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干(gàn )的时候(hòu )加入盐(yán ),翻炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
