做法:春(chūn )笋切成片(piàn )后加(jiā )少许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半(bàn )掩住(zhù )春笋,盖上锅(guō )盖大(dà )火煮(zhǔ )开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
