做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后(hòu )用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁(zhī )时盖上(shàng )锅盖焖(mèn )。
