做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成(chéng )段(duàn )。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量(liàng )清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火(huǒ )。煮到水快(kuài )熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖。
