做法:春笋切成(chéng )片后加少许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均(jun1 )匀稍收汁时盖上(shàng )锅盖焖。
