做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁(zhī )时盖上锅盖焖。
