做法:洗净(jìng )宰好鲫鱼,洗净淮山和薏(yì )米。用清水把(bǎ )陈皮泡软(ruǎn ),拍裂一小块姜(jiāng ),热锅,用(yòng )姜块在(zài )锅上擦一(yī )遍,放两勺油,待油六成热下鱼(yú ),煎至微黄(huáng )。煮沸瓦煲里(lǐ )的(de )清水(shuǐ ),放入(rù )煎(jiān )煮好的鲫(jì )鱼和其他(tā )材料,武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。
