做法:春笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快熬干(gàn )的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
