做(zuò )法:洗净宰好(hǎo )鲫鱼,洗(xǐ )净(jìng )淮山和(hé )薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅(guō )上擦一遍,放两勺油,待(dài )油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放(fàng )入煎煮好(hǎo )的鲫鱼和其(qí )他材(cái )料,武火(huǒ )煮沸,转中(zhōng )小火煲一个半小时,下盐调味(wèi )即可品尝。 -
