做法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半(bàn )掩住(zhù )春笋,盖(gài )上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖(gài )焖。
