做法:春笋切成片(piàn )后加少许盐捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
