做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左(zuǒ )右(yòu )。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少量清(qīng )水(shuǐ )半(bàn )掩住春(chūn )笋,盖(gài )上锅盖大火煮开后(hòu )转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
