做(zuò )法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干(gàn )的时候加入盐(yán ),翻(fān )炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
