做法:洗净宰(zǎi )好鲫鱼,洗净(jìng )淮(huái )山和薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块(kuài )姜,热锅,用姜(jiāng )块在(zài )锅(guō )上擦(cā )一遍,放两勺油(yóu ),待油六成热下(xià )鱼,煎至微(wēi )黄(huáng )。煮沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和其(qí )他材(cái )料,武火煮沸,转中小火煲(bāo )一个半小时,下盐调味即可品尝。
